Greens, Eggs, and Ham Casserole

Cooking Spray

1 loaf (8 oz) whole-wheat Italian bread, sliced

6 oz sliced Canadian bacon, pieces halved

2 cups torn Swiss chard leaves, stems removed

4 oz Gouda cheese, grated

1 cup grape tomatoes

10 large eggs

4 tsp Dijon mustard

Kosher salt and pepper

1/4 tsp each cayenne and ground nutmeg

2 1/2 cups whole milk

  1. Coat a 9 x 13-in. pan with cooking spray. Layer the sliced bread in the pan, alternating with the ham, Swiss chard, and cheese; top with tomatoes.
  2. Whisk together the eggs, mustard, 1 tsp each salt and pepper, cayenne, and nutmeg, then whisk in the milk. Pour the egg mixture over the ingredients in the pan and let stand for 1 hour.
  3. Heat oven to 350 degrees Fahrenheit. Bake until puffed and golden,about 40 minutes. Let rest for 15 minutes before serving. (Make ahead:  Cut into squares; refrigerate up to 4 days in an airtight container.

Makes 8 servings. Per serving:  296 cal, 15 g fat (7 g sat fat), 20 g protein, 20 g carb,2 g fiber.

Small Hair Fixes that Make You Look Younger

Whether or not you color your hair, there are easy fixes that add freshness and vibrancy–also, I might add, also brightens your entire complexion.  Here are some simple hair moves that do help a lot.

The Right Cleanser

If you color your hair, but don’t use color-protecting products, you are just burning money! Why?  Permanent dyes lift the hair’s cuticles and make strands more porous, allowing water to seep in and rinse away pigments each time you wash. A color-protecting shampoo and conditioner helps to seal the cuticles to minimize dye loss.  Tresemme’ Color Revitalize Shampoo and Conditioner is a good choice.  If you need extra help, Living Proof’s new Timeless Pre-Shampoo Treatment acts like a raincoat for your hair:  work the cream through dry hair, then wait at least five minutes before you wash like normal.

Hair Needs Antioxidants

Shea Butter Helps Restore Luster

Hair color may help you appear younger, but it also takes the shine out of your hair.  Shea butter treatment brings back sheen and keeps strands healthy, which makes your shade look more radiant.  You can buy shea butter at health-food stores or Amazon:  rub a small amount of raw shea butter through clean, damp hair, starting at the ends and working upward, avoiding the roots.  Wait 20 minutes, then shampoo. Do this at least once a month, but if your hair is extremely dry, every two weeks.

Covering Roots

There are dozens of root concealers that deliver temporary color which rinses out when you shampoo.  To hide a few grays, a brush-on product like No Gray Quick Fix allows for precise dabbing. For denser coverage, an aerosol spray like Rita Hazan Root Concealer ($25) can mask inches of regrowth in a few mists.  To get rid of oily hair and roots in one swoop, go with a powder like Color Wow Root Cover Up ($34.50).


Ginger-headed shades fade faster than any other hue, because the pigments sed in red dyes tend to be larger than those used in blonde or brown ones, so they don’t penetrate strands as well.  A new line of red shades in Revlon’s Color-Silk Luxurious Buttercream Vivid Color Collection formulates the red pigments so they can absorb into strands better.

Treatments that Boost Your Natural Shade

Even if you don’t color your hair, you can still perk it up.  A tinted at-home gloss designed for your shade can correct yellow tones in gray hair, tone down an orangey cast in brown hair, or bring out richness in very dark hair.  Try Madison Reed Color Reviving Gloss ($24.95). Smoothing and Preventing Wrinkles

    • Use once or twice a week
    • Mash up half a ripe papaya and half a ripe avocado, then stir in 2 oz plain yogurt.
    • Spread mix all over your face and leave on for 15 minutes, then rinse and apply moisturizer.

To Fade Spots and Even Skin Tone

  • Spot-Treat with Lemon
    • DIY trick to correct discoloration, and if you have dark skin, stick with an over-the-counter treatment, as lemon could cause white spots.
    • Cut the lemon in half-inch slices and squeeze the juice from one slice onto a cotton ball(people with sensitive skin should dilute 1 tsp juice with 4 tsp water).
    • Dab the cotton ball on any dark spots, rewetting it with more juice for each spot.
    • Wait 20 minutes, rinse face with water and apply moisturizer.
    • Do daily or every three days if you have sensitive skin for six weeks; you may stop sooner if the spots fade before then.

Being Beautiful at Any Age

For people with fair skin, avoid the sun if you can–if you are out in the sun, and like to be out in the sun, wear a high SPF every day to help fair skin stay smooth and spot-free.

1987  This is me in basic training, Ft. Dix, NJ.  I didn’t have wrinkles at this young age, but I had an acne problem from ages 11-18, and it was starting to clear up when this picture was taken.  I had oily skin, but took great care of it.  We were not allowed to eat junk while in training, so my skin improved even more.  I also drank lots of water–sodas were not allowed while training.

What you put in your body has a big impact on your skin.

2000This is me with my youngest daughter, Renee!  My go-to drink at this time was water!  I ate lots of fresh fruits and veggies that are rich in antioxidants, and I sipped on hot water with lemon and apple cider vinegar to jump-start my digestion.  I don’t sip on this like I used to, but every once in a while, I will take the time to do that.  I’ve noticed that if my digestive system seems clogged, my skin breaks out and looks dull, so I will start up on the lemon and apple cider vinegar again, which makes my skin glowing!

This was taken a few months ago with both of my daughters, Danielle (left) and Renee (right). I still focus on nourishing my skin so it stays soft, but above all, being active keeps me young.  I spent a lot of time out in the sun when I was a kid, but luckily, never got sun damage.  Since I started using AdvoCare supplements, and drinking about 2 liters of water a day, my skin is seeing great improvements.  Even my mom can’t get over how good I look, and she can be very pessimistic.  Since I have been exercising more, my appearance has become more radiant because of the way I feel and look.  If you can find activities you enjoy, I encourage you to do them, because you are more likely to stick with them if you enjoy them.

Oils That Improve Everything!

Have you ever been to Ulta, the beauty store?  You’ll see products for skin, hair, and nail products made with or created entirely from naturally derived oils.  Experts love them for  healing powers, and I’m a fan of how lightweight yet hard-working they are.  Here is a guide to see what oils will work best for you!

Almond Oil

As a snack, almonds are filled with healthy fats, Omega 3, and is also a super moisturiser.  It’s hypo-allergenic, so it’s good for sensitive skin.  It helps ease the symptoms of psoriasis and eczema.

Argan Oil

In Morocco, its nickname is “liquid gold.”  It comes from the kernels of the argan tree and is loaded with vitamin E, essential fatty acids, and proteins.  It is ulta-hydrating for skin and strengthens hair, and is also a great nail treatment on its own.  If your nails or brittle or peeling, soak them in argan oil for 10 minutes every day for a week and this will help keep nails healthy.

Coconut Oil

It’s the all natural miracle hydrator.  It works on face, body, lips, cuticles–anywhere you want to relieve dry skin.  It is packed with nourishing fatty acids, and make-up artists like to use it as a make-up remover.

Jojoba Oil

Along with being a wonderful skin softener, this plant-derived oil works wonders on dry or textured hair.  Jojoba oil smooths frizz, conditions, and keeps hair strong.  Look for it in shampoos and condiioners, or use it alone as a weekly deep-treatment:  Work a quarter-size amount through clean, damp hair (avoid the roots), then rinse after 10-20 minutes.

Marula Oil

Derived from the nuts of Africa’s marula tree, this oil can help clear up acne.  Yes, an oil can nix breakouts!  It has antimicrobial elements that fight acne-causing bacteria, it’s lightweight and doesn’t clog pores, and it assists in balancing skin’s oil production. Many natural beauty brands offer 100% pure marula oil; it’s also an excellent frizz tamer, so looks for marula in hair products, too.

Olive Oil

This stuff is great for dandruff or an itchy scalp!  It can help thanks to its antibacterial properties.  Massage 1/4 cup of olive oil into your scalp once a week so it’s evenly saturated.  Wait 20 minutes, then shampoo and condition.  Olive oil is also rich in vitamins that help  battle lines and spots caused by sun damage; add a drop or two into your moisturiser for anti-aging benefits.

Rosehip seed oil

This is a powerful anti-ager, which is extracted from the seeds of rose bushes, and full of potent antioxidants like vitamins C and E, along with wrinkle-fighting vitamin A.  It protects skin from damage that can cause lines and dark spots, along with increasing cell turnover rate, which results in a smoother complexion.  Apply a few drops to your face like serum, or blend them into your dollop of nighttime lotion.
