Greens, Eggs, and Ham Casserole
1 loaf (8 oz) whole-wheat Italian bread, sliced
6 oz sliced Canadian bacon, pieces halved
2 cups torn Swiss chard leaves, stems removed
4 oz Gouda cheese, grated
1 cup grape tomatoes
10 large eggs
4 tsp Dijon mustard
Kosher salt and pepper
1/4 tsp each cayenne and ground nutmeg
2 1/2 cups whole milk
- Coat a 9 x 13-in. pan with cooking spray. Layer the sliced bread in the pan, alternating with the ham, Swiss chard, and cheese; top with tomatoes.
- Whisk together the eggs, mustard, 1 tsp each salt and pepper, cayenne, and nutmeg, then whisk in the milk. Pour the egg mixture over the ingredients in the pan and let stand for 1 hour.
- Heat oven to 350 degrees Fahrenheit. Bake until puffed and golden,about 40 minutes. Let rest for 15 minutes before serving. (Make ahead: Cut into squares; refrigerate up to 4 days in an airtight container.
